Grilled Flank Steak and Vegetables

Makes 6 servings

½ cup olive oil
1/3 cup
low sodium soy sauce
¼ cup red wine vinegar
2 Tbsp. lemon juice
1 ½ Tbsp. Worcestershire sauce
1 Tbsp. Dijon mustard
2 garlic cloves
½ tsp. black pepper
1 ½ lb. flank steak
2 red bell peppers
1 medium onion
12 large mushrooms
3 Tbsp. olive oil

1. Mince garlic and mix all ingredients in bowl for marinade.
2. Place steak in large shallow dish, cover with marinade, cover and set in refrigerator for 6 hours.
3. After marinating, place steak on pre-heated grill and cook for 6 minutes on each side.
4. Slice peppers, onion and mushrooms into strips. Place in a bowl, toss with olive oil to coat.
5. Place on grill next to meat. Grill until cooked to desired doneness.
