Makes 6 servings
8 oz. low-fat cream cheese
24 medium, fresh strawberries
1 ½ oz. semisweet chocolate
1 tsp. vanilla extract
1 cup light whipped topping
1. Set cream cheese out to soften. Wash strawberries and slice into halves. Set aside.
2. Grate chocolate and set 2 tablespoons aside. Melt remaining chocolate in microwave, stirring until smooth. Cool chocolate for 5 minutes.
3. In small bowl, beat room temperature cream cheese and vanilla until smooth. Beat in melted chocolate. Fold in whipped topping and 2 tablespoons of reserved chocolate.
4. Spoon 1 tablespoon chocolate cream between 2 strawberry halves.
