Ingredients

  • 2 large bunches fresh spinach
  • 1 large package strawberries
  • ⅓ cup olive or canola oil
  • ¼ cup white wine vinegar
  • ¼ cup sugar
  • ½ cup slivered almonds
  • 2 Tbsp. poppy seeds

Preparation

Wash spinach and strawberries. Dry spinach with paper towel or in salad spinner. Slice strawberries, enough for 4 cups. Combine spinach and strawberries in large bowl. In separate bowl, whisk together oil, vinegar and sugar. Add almonds and poppy seeds and stir to combine. Pour dressing over spinach and toss to coat. Refrigerate for one hour prior to serving to allow flavors to blend.
