Ingredients

For the Salad

  • 8 cups Spinach
  • ½ cup Feta cheese
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, cut in half
  • 1 red pepper, chopped
  • 1 cup white beans
  • ½ cup red onions, thinly sliced

For the Dressing

  • ¼ cup extra virgin olive oil
  • ½ cup balsamic vinegar
  • ¼ tsp garlic powder
  • ¼ tsp pepper
  • ¼ tsp red pepper flakes
  • ½ tsp oregano
  • ¼ tsp powered rosemary

Preparation

Combine all salad ingredients in a large bowl and toss.

Combine all dressing ingredients in a sealable container (canning jars work great) and shake until well combined. Keep leftovers refrigerated.

Divide salad into 4 servings and add dressing to taste.
