Ingredients
- 1 (8 oz.) package cheese tortellini
- 2 tsp. olive oil
- 1 green bell pepper, chopped
- 1 small onion, chopped
- 1 (12 oz.) link spicy Italian sausage
- 1 (24 oz.) jar marinara pasta sauce
- Grated parmesan cheese, optional
Preparation
In a medium saucepan, cook tortellini according to package directions. Meanwhile, in a large skillet, heat oil. Add peppers and onions and sauté 1-2 minutes, until fragrant. Add sausage and cook until internal temperature reaches 160 degrees, about 10-15 minutes. Remove sausage from pan. Allow to cool slightly. Add pasta sauce to pan, cover and allow sauce to heat. Slice and quarter the link. Serve pasta with sausage-pepper mixture and top with a sprinkle of parmesan cheese.
