Ingredients

  • 1 (15 oz.) can garbanzo beans, drained and rinsed
  • 1 avocado, halved and pit removed
  • 1 small apple, chopped
  • 1-2 ribs celery, minced
  • 1 medium carrot, minced
  • ¼ onion, minced
  • 2 garlic cloves, minced
  • 1 cup fresh spinach or kale, chopped
  • ½ fresh lime, juiced
  • ¼ tsp. dry mustard powder
  • Salt and pepper to taste

Preparation

In a medium bowl, combine avocado and garbanzo beans. Mash with fork. Add remaining ingredients and mix until well combined.

Test recipe was made in a food processor which significantly cut down on the prep time. Combine all whole ingredients and pulse until finely chopped.
