Honey pecan chicken salad sandwich recipe
Makes 6 servings
- 3 c. cooked chicken breast, cubed
- 1 c. chopped pecans
- 1 c. chopped zucchini
- 1 c. red grapes, halved
- ½ c. chopped red onion
- ½ c. mayo, reduced fat
- ½ c. sour cream
- 2 teaspoons honey
- 2 teaspoons Dijon mustard
- ½ teaspoons ground black pepper
In a large bowl, combine chicken, pecans, zucchini, grapes, and onion. Set aside.
In a small bowl, whisk together the mayo, sour cream, honey, mustard, and black pepper. Add dressing to chicken mixture and stir until well mixed.
May serve on bread or wrapped in a tortilla.
