Ingredients

  • 1 cup oatmeal, dry
  • 1/3 cup almonds, chopped
  • 1/3 cup sweetened shredded coconut
  • 1 Tbsp. ground flaxseed
  • ½ cup creamy peanut butter
  • ¼ cup honey
  • 1 Tbsp. chia seeds
  • ½ cup dried cranberries, roughly chopped

Preparation

Preheat oven to 350⁰F. In a medium bowl, mix oatmeal, almonds and coconut. Spread mixture on a medium baking sheet and bake for eight to 10 minutes, stirring after five minutes.

er medium bowl, microwave the peanut butter for 20-30 seconds until runny. Add the oatmeal mixture, flaxseed, honey, chia seeds and cranberries. Form into one and a half inch balls and refrigerate.  

Store in an air-tight container in the refrigerator for one week or in freezer for three months.
