Makes 6 mini omelets, 3 servings

Ingredients

  • 5 eggs
  • 1 slice deli ham, chopped
  • ½ cup shredded cheese
  • ¼ cup chopped red bell pepper
  • ¼ cup chopped white onion
  • ½ cup chopped fresh spinach

Preparation

Preheat oven to 350°F. Combine all ingredients into a large bowl. Whisk until well combined. Pour mixture into sprayed 6-muffin tin. Bake 10-15 minutes or until toothpick comes out clean. Serve on toast, English muffin or cut in half and roll in tortilla. Keep in container with lid in refrigerator for up to 4 days. Reheat in microwave 1 minute prior to serving.
