Makes 12 muffins

Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole-wheat flour
  • ½ cup sugar
  • 2 Tbsp. canola oil
  • 2 eggs
  • ½ cup natural peanut butter
  • 1 cup skim milk
  • 1 Tbsp. baking powder
  • ½ cup mini chocolate chips

Preparation

Preheat oven to 375° F. Spray muffin tin with non-stick spray. In large mixing bowl, combine all ingredients (except chocolate chips). Stir until well combined. Fold in chocolate chips. Spoon batter into muffin cups. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
